MENORQUIN'S SOUP

MENORQUIN'S SOUP AND BOILED



This dish is one of the most common that is made at this time of the year in Menorca.
It is easy to make and does not take long, and in addition they are two plates in one, once you get first and second plate.

You get a rich broth to make a soup of pasta, semolina and rice, ideal for the coldest times, and on the other hand, the components that we have put to make the broth are the second dish.

Whether it is just as we took it from the broth, simply boiled and adding olive oil and salt, or with a tomato sauce etc.


Have you heard about Wednesdays from "Brou" to Menorca?

The Menorcan Association of Cafeteria, Bars and Restaurants, starts the III edition of "Els dimecres és dia de Brou", that will take place during the Wednesdays of the month of December where you can taste this typical dish of Menorcan cuisine in various restaurants.

The menu "Els dimecres és dia Brou" will be offered at a common price of € 13 (VAT included) and will consist of a first course with soup and noodles and a second course with meat, chickpeas, potatoes and vegetables. In addition, the menu also includes dessert, bread and glass of wine or water.

The menu can be tasted in eight establishments specializing in Menorcan cuisine from different areas of the island: Ciutadella (Ca'n Lluis), Ferreries (Mesón Rías Baixas,), Es Mercadal (Ca n'Aguedet, Hotel Jeni & Jeni Restaurant and Molí D'es Racó), Son Parc (Es Bruc Golf), Maó (23 Can Avelino) and Sant Climent (Casino Sant Climent).

We need:
Chicken, half a kilo of minced meat, pork and veal mixture
1 ripe tomato
4 carrots
4 potatoes
a sprig of fresh thyme
a couple of branches of fresh celery
Salt
Water
2 eggs
bread crumbs
thyme
1 chopped garlic
parsley
chickpeas (previously boiled)

How is it done?
First we mix the minced meat with the eggs, a little salt, the chopped garlic, parsley, a little bit of fresh thyme, and the bread crumbs that we need to form some soft balls. Normally they are usually of a rather large size, so there is one per person.

We prepare a pot and introduce about 2 and a half liters of water. Put the chicken on the fire, the peeled carrots, the whole peeled potatoes, the celery, the thyme, the chopped tomatoes, and a little salt. We boil and remove any foam that forms, then add the meatballs and cover. It should boil about 15 or 20 minutes.
Uncover and add the chickpeas that boil 5 minutes. Then we strain the broth.

We will have a delicious chicken broth to make with pasta (usually noodles), rice, semolina or whatever you like.

The second dish can be served with a splash of olive oil and salt, or with tomato sauce or red pepper.
